Welcome to October! We had the best day yesterday with a quick trip to the mountains for an open car train ride to see the fall colors (more info on that at the end of the post if you want the whereabouts). Which naturally has put me in the mood for all the slow cooking goodness! So, you guessed it, this month’s meal planning tool is all about slow cooking inspo.
Well, I’m not sure how inspirational it’ll actually be, but it’s short and sweet and will give you a few fun ideas for those little gatherings that will be popping up soon. As well as a couple o’l tried and true slow cooker recipes that never fail, and then of course there are a few cocktails. I mean, you can’t tell me that Hot Buttered RumChata doesn’t just scream fire pit and woolen blankets.

Day Tripping to the Mountains
We’re so lucky that we can be in the mountains within an hour and a half. I’m not talking 12,000 feet of elevation, but we were just above 9,000, and the colors made my heart so happy. Nolan’s too, as he so sweetly shared me with and a few passengers today.
We did the Georgetown Loop Railroad (from the Silver Plume station). It’s not the cheapest form of entertainment for 2.5 hours, but it was fun and something we haven’t done before, which I love and made it totally worth it.
So, if you’re in Colorado, near the metro Denver area, it’s well worth the half-day excursion, even if it’s not fall. A ton of history and beautiful scenery.
