Whole Roasted Chicken
Truth is, I don’t have this one mastered yet. I’ve tried twice. First time I cooked the bird upside down in the IP (whoops). Still incredibly flavorful, but we just shredded it up dinner and leftovers.
Second time was a bit better (breast side up). However, I am still trying to figure out how to put the right broil on it to crisp up the skin. If you have any tips, I’m all ears!
Instant Pot Whole Roasted Chicken Recipe
Non-food items you need:

Use the Whole Chicken!
It took me a while to get on the bone broth wagon. But a few weeks ago I picked up a rotisserie chicken from the grocery store and I had all the other goodies to make it on hand, so figured I’d give it a go.
Why drink and use bone broth? Here’s an article with six top benefits. I am not a big user of apple cider vinegar, but it is supposed to be a powerful agent for helping to release nutrients from the bone marrow. I’m planning to try it in the next batch (which will be beef!).
There is nothing to this recipe. Put your chicken bones, onion, carrots, garlic, herbs and a little salt (if you want) in your instant pot. Fill the pot with water, stop just below the max fill line. Set your Instant Pot to high pressure for 2.5 hours, then natural release for 30 minutes. That’s it!
It will take a long time for the broth to cool down, so if you start this mid-morning, it will be ready to cook with by dinner time. Let it get to at least room temp before placing in the refrigerator or freezing.
I drink a cup of it at lunch most days, and of course it has so much more flavor than standard stock for Chicken Green Chili, Chicken Wild Rice Soup, gravy, risotto, potatoes, you name it!
Makin’ Dough
As you know from earlier in the summer when I discovered it was possible to proof bread dough in an Instant Pot in a fraction of the traditional time (remember that Everything bread?), you know I had to explore more options.
I wanted to make whole wheat pitas for Sunday family dinner and decided on this recipe from Damn Delicious, well because everything I’ve made of hers is, well, delicious! Most pita recipes call for 2-3 hours of proofing (rise time). So, I figured if I gave it 1 hour in my Instant Pot I would be good to go. I was! I didn’t get the full puff like I wanted on all the pita’s, but I am not sure if that was due to proofing or my oven temp? Either way, they were still tasty!
