So, if you came here via a cake pop post, your have not been deceived! These little gems are super versatile to be either circus animal cookie truffles or cake pops!
As I was working on hosting two parties (in one day) for my daughter’s 9th birthday we were trying to come up with something simple, but fun to make. In addition to ice cream pies and cake. I thought of an Oreo truffle recipe I had seen once and thought they looked simple enough to make. Then as I was searching, I came across a couple versions of Circus Animal Cookie Truffles, and that was all she wrote!
Because these are so easy, there is no need to get into the weeds. The best tip I can give you, is make sure your cream cheese is at room temp to form the dough. These circus animal cookie truffles are also super easy to form into cake pops. As long as you have a base to put the sticks into so the chocolate can drip off.

Truly, there is nothing to this! You can crush the cookies in a plastic bag with a rolling pin. Or you can do what we did and be done in 2 minutes by throwing them in your food processor.
Once you have the cookie crumbs in a medium bowl, add the the softened cream cheese, and combine until a dough forms. Place the cookie/cake pop balls on a lined baking sheet, then stick them in the freezer for 15-30 minutes.
Next up, melt your chocolate. I used a 50/50 combo on these based on what I had on-hand. Half were coated with Wilton candy melts, it was a version that actually had “sprinkles” in them already. The other half, which is the way I’ll do them all the next time, I used a pack of Ghiradelli white chocolate chips. Then added a few drops of red gel food coloring to get the pink color I wanted.
Dip the cookie balls (seriously, I can’t say that with a straight face) in the chocolate with a fork. Then placed them on the baking sheet to start cooling. Sprinkles are optional, but add that classic Mother’s circus animal cookie touch.
Let ’em chill, then about an hour before you’re ready to serve, bring them to room temp. Be sure you get one right away, or else there won’t be any left!

Whether you keep them as truffles or transform them into cake pops. These easy, no-bake circus animal cookie truffles will be a huge hit at your next party!

Ingredients
- 2 - 11oz bags of Mother's Circus Animal Cookies
- 1 - 8oz package of cream cheese, at room temperature
- 2 - bags of white chocolate chips
- Red gel food coloring
- Sprinkles
- Cake pop sticks (optional)
Instructions
- Place cookies, one bag at a time in your food processor. Pulse until crumbs are formed and no large cookie pieces remain.
- Place cookie crumbs in a med/large bowl.
- Add the softened cream cheese to the crumbs. Use your hands to combine until a dough is formed.
- Take small pieces of the dough and form truffle balls, place them on a lined baking sheet.
- Once all the cookie balls are formed, place them in the freezer for 15-30 minutes.
- Melt your chocolate chips in the microwave for 1 minute at time, stirring until smooth. Or you can use a double boiler. Let chill slightly and add 3-5 drops of food coloring, or until desired color is achieved.
- Dip one cookie truffle ball into the chocolate using a fork to move it around and coat completely. Tap the fork against the bowl to get excess chocolate off. Then place the truffle back on the lined sheet.
- If you're making cake pops, add the sticks to the truffle, and use that to dip in chocolate. Then store in your cake pop pan to let the chocolate drop off and set.
- Once all truffles are made, place them in the refrigerator for 10 minutes until chocolate is set.
- They can be served now or you can put them in a storage container and keep chilled until an hour prior to serving.
- Store any remaining truffles in a covered dish in the fridge.
