Alright busy Mama’s, this one’s for you! Do you manage to swing through the Starbucks drive-thru a couple times a week to or from the kid’s practice or on the way to work? I am glad that there are food options other than pastries, breads and cake pops. However, have you looked at the ingredient list on a protein box or a wrap? Wowza! Now, don’t get me wrong, in a pinch, especially when I’m traveling, I will grab a protein box and be on my way. But when I’m home, I want to control my food as much as possible, so I decided I’d make my own and here you go!
These seriously could not be easier, the longest part of the whole ordeal is making the hard boiled eggs! I mean even the homemade peanut butter takes less time than the eggs. 🙂
Pick-up a few veggies, a couple fruits, eggs and dry roasted peanuts or raw almonds (for your nut butter) and you’re good to go. You could totally add a few pieces of cheese, raw nuts to replace the PB, hummus or even half an English muffin to round out your macros.

Stack ’em, grab ’em and go! I usually eat mine around 3:30pm and man does it hit the spot. I’m full with good, whole foods that give me energy to get through the rest of the work day and into the crazy evening. And, if I happen to be running to school pick-up or an appointment, the containers are perfect for the road!

Ingredients
- Veggies
- Fruits
- Eggs
- Homemade peanut butter (or almond butter)
- Optional: cheese, raw nuts, English muffin, hummus
Instructions
- Boil the eggs (I don't usually peel them before prepping the boxes or they stink things up)
- Make your peanut butter in a food processor or high powered blender
- Wash and chop veggies
- Wash fruit (I usually cut those up the night prior)
- Put it all together in your portioned boxes and containers, store in the fridge and grab as you run out the door!
